Safe Serving - Hygienic serving concepts for food distribution
The hotel and catering industry is subject to strict hygiene regulations, especially since the onset of the coronavirus pandemic, which have far exceeded the requirements of HACCP since May 2020. All types of food must be protected on the way between the kitchen and the guest, therefore requiring a closed system, e.g. with appropriate lids. The year 2020 saw a resurgence in the use of plate cloches (Gloschen) in high-end restaurants and hotels, made from materials such as silver or alpaca. However, the most notable trend was the use of plastic cloches and bonnets in the more practical settings of the hospitality industry.
