Serving suggestions for Spanish tapas
Originally served as small snacks in simple Spanish bars and bodegas to cover wine glasses, tapas have continued their success story over the years and are now one of the best-known Spanish national dishes and, in many cases, culinary highlights in gastronomy. The line between a small snack to accompany a drink and a full-blown starter is often blurred, and a huge selection of small dishes is offered depending on the region and location.
From our diverse collection, we have compiled a few product suggestions in this section that, according to customer feedback, have proven particularly suitable for serving tapas or have attracted special attention from guests.
Hot tapas from terracotta
Tapas calientes, or hot tapas, are usually served piping hot straight from the oven to the table. Traditionally, Mediterranean terracotta dishes are used for this purpose in Spanish and Portuguese cuisine. Typical dishes served in these oven dishes include albóndigas, huevos Napoleón, chorizo, gambas al ajillo, champiñones gratinados and many other delicacies.
The Mediterrano series is one of the few product groups that we do not manufacture in porcelain, but instead have made for us in Spain using traditional craftsmanship.
We use a firing temperature of around 1,000 °C, which ensures that the terracotta is hard and resistant, making it well suited for use in the catering industry.
Simple tapas plates for one person
The tapas plate was originally created as a small lid to protect drinks – usually wine – from flies and other insects. That is why the traditional size of a tapas plate is between 8 and 16 cm and is used to serve a small accompaniment to a drink. Depending on the region and province, this could be a little queso manchego, jamón serrano, olives, bread with a little salami, croquetas, tortilla española... Oval tapas plates are perfect for ‘pinchos’ – small skewers of meat or vegetables. Modern tapas plates
Larger tapas arrangements and tapas combinations are currently being served on very modern plates and platters in Mediterranean-style restaurants. These are often colourful, with reactive glazes or high rims. The aim of this somewhat more sophisticated presentation is to give tapas a unique and distinctive character despite their popularity, as the price transparency of tapas is high and guests no longer judge them solely on taste. Presentation and serving style have a major influence on guest response, whether in a bodega, restaurant or tapas bar.
Modern tapas bowls
Although the historical origin of tapas once referred only to ‘cover plates’, today many tapas are also served in small bowls. Tapas containing sauce are particularly popular in these small bowls. Whether these are served for one person only is open to question, as ‘tapas para compartir’ – snacks to share – are a sign of southern European conviviality. Highlight tapas in particular
The unusual shapes and colours of the tapas bowls allow even simple and familiar tapas to stand out from the crowd. Using the following three examples, we would like to show how simple tapas such as salami sausage, mussels in tomato sauce and oyster tapas can be transformed into a highlight through the way they are presented. The 26 cm spoon bowl in particular draws special attention to the appetisers and tapas presented thanks to its shape.
