The porcelain selection for a perfect street food concept

Street food represents a contemporary gastronomic concept that frequently incorporates a combination of finger food, fork food, and flying buffets. Street food can be found in a variety of settings, including as a permanent feature in so-called "magazine" outlets and as a temporary addition to street festivals and gourmet events. In contrast to traditional dining, guests have the flexibility to select the quantity and combinations of food from a diverse range of open-choice dishes. In contrast to a buffet, guests are not required to serve themselves, with portioning being conducted by street food staff at fixed prices. There is considerable variety in the billing systems used, with guests typically paying individually at the serving station and collecting their food from that point.

Porcelain is an extremely durable material that offers the highest standards of hygiene and is aesthetically pleasing. It is not advisable to use stoneware, ceramics or other porcelain imitations for street food as they do not withstand the demands of this environment. They break more quickly and lose their shine and the appearance of the glazes in a short time. Melamine and plastic should be avoided at all costs, particularly for hot and warm dishes, due to health concerns.

Porcelain for street food is available in two categories: serving dishes and eating dishes. There are no specific requirements for eating dishes; any plates and bowls may be used, depending on the food items being served. Serving dishes must offer a high degree of functionality and differ from ordinary buffet porcelain. Bowls and plates should not be too large and should offer rather small portions, as street food is extremely varied and dishes should not be left open for too long.
