Sushi
The preparation and serving of sushi has been a cornerstone of Japanese cuisine for centuries. The fundamental component of sushi is fermented rice, which is combined with other ingredients such as raw or smoked fish, seafood, seaweed and vegetables. The preparation methods for sushi are as diverse as the ingredients themselves. Nigiri sushi is prepared using the fingers.Maki sushi is rolled using a bamboo mat.Gunkanmaki sushi is used for particularly delicate ingredients, and oshi sushi is pressed into wooden moulds.
There is a distinction to be made between sushi-ya and kaiten sushi when serving sushi.Sushi-ya is a style of service where sushi is served directly to the customer at the table. In contrast, kaiten sushi is a self-service style where a conveyor belt is set up for guests to help themselves. It is customary to serve sushi with wasabi or soy sauce.
