Porcelain for prawns and shrimps
To cater to the diverse range of ways in which gambas, shrimps, prawns and related crustaceans are served, it is essential to have a suitable selection of serving dishes. It is notable that shrimp and other shellfish are enjoyed in a multitude of ways, with a vast array of variations. These range from simple shrimp rolls at harbour snack bars to more refined dishes such as gambas al ajillo and langostinos with caviar. It is likely that these are the most popular type of seafood globally, with consumption occurring both hot and cold.
In the Mediterranean cuisine of southern France, Spain and Portugal, freshly fried Gambas are served in the typical terracotta bowls that we at Holst Porzellan also offer under the name Mediterrano. As the preparation of "Gambas al Ajillo" differs little from each other, except for the addition of spices, garlic, onions or paprika, professional hosts are well advised to use selected serving dishes to set their 'own' Gambas apart from the crowd.
Similarly, the Italian "Cocktail di Gamberi" and "Cocktail di Gamberetti" are frequently served in glass goblets. Aesthetically pleasing bowls made of white or coloured porcelain, accompanied by garnishes and fruit decorations, can be used to create entirely separate appetiser and main course arrangements.
