Porcelain for Exquisite Fish Pies
This inspiration, "Fish Pies," includes 14 items designed for the proper preparation and serving of fish pies. Originally invented to turn leftover fish from the past week into a meal, fish pies have become a culinary rarity, representing sophisticated cooking and elaborate preparation for connoisseurs.
The ingredients and preparation are, in the truest sense, highly layered. As Holst Porzellan caters more to professional hosts than private individuals, we recommend preparing fish pies in individual portions using the "Strasbourg" pie dishes for one person (approximately 100-200 g), two persons (200-300 g), or four persons (400-600 g). Preparing large trays or casseroles is not recommended in the catering industry, as fish pies should always be freshly prepared in portions and lose their form when removed from larger dishes.
For serving fish pies as a cream pie for one person as part of a couvert or as an amuse-bouche, we recommend the porcelain cooling bowl BUD 007. This bowl, when pre-chilled, retains cold far longer than conventional porcelain, keeping the pie fresh.
For transferring fish pies into smaller serving units, we recommend ramekins, which allow for brief gratinée in a salamander to perfectly mask any imperfections caused by disintegration.
For simultaneous preparation and serving of fish pies, the porcelain cocottes "COC" can be used, which can be stylishly served with their lids on.
