For bars, pubs, clubs and discos, appetisers are an important source of revenue and are known to increase the desire for and tolerance of alcoholic beverages. This is especially true for salty pastries and savoury snacks such as mini meatballs, rollmops, methäppchen or boiled eggs.
Until the 1980s, almost every corner pub had a small selection of these revenue drivers on the counter. This insight was already known centuries ago in Spain, where tapas are based precisely on this insight as an accompaniment to beer and wine.
