How to serve asparagus

The white asparagus is a very special and popular dish throughout Europe, which has, thanks to its cultivation in many asparagus regions, grown into a symbol of regional delicacies. Over the years, the price of fresh open-field asparagus has risen considerably, further enhancing its uniqueness and exclusivity.

Particularly in gastronomy, eating asparagus has become an expensive gourmet experience and should therefore be served as a special treat. Fresh spears of asparagus deserve more than a round plate and only achieve their full visual appeal when presented on oval, rectangular or elongated serving plates and platters.

Asparagus dishes should never be served on a round plate because such plates do not correspond to the elongated form of the asparagus and create a discordant visual impression. Even round plates measuring 33 cm or more disrupt the presentation, even if they can fully accommodate the asparagus.

Professionally arranged asparagus is always served horizontally to the guest, and only oval, rectangular or elongated asparagus plates are suitable for this purpose. When asparagus is served with raw or cooked ham, the ham should be presented on a separate plate or board so that the consistency and flavour of the asparagus sauce do not overpower the aroma of the ham.

Asparagus connoisseurs appreciate white asparagus for its firm, crisp texture. For presenting cooked asparagus, we have developed special drainage grids on which the asparagus does not become soggy or mushy, thereby preserving its flavour and crunch. This drainage grid can be used with a range of oval plates and an asparagus serving bowl (for 4 to 6 people).

In fully arranged asparagus dishes, the desired sauce should only be used sparingly as a decoration, since it can alter the natural flavour of fresh spears too much. The guest should be allowed to decide where and how much Hollandaise, melted butter, honey-mustard sauce, white wine, herb sauce or other variants are required for enjoying the asparagus. This is why a good asparagus plate is always served inseparably with an asparagus sauciere.
