Rim shape plate with wide rim
An old rule of service states "the mirror belongs to the kitchen and the rim to the guest". The mirror refers to the serving surface of the plate, and the rim refers to the rim of the plate. Thus, the "classic plate" of service is defined, as only rim plates have both a mirror and a rim.
In this section, we present the classic rim plates from the Holst Porzellan collection, with a small rim, a wide rim, or even a relief rim. For use at the table, the rim plate has the great advantage that the service can reach under the rim, making it easy to lift the plate. Modern chefs often decorate the edge of the plate with arrangements of sauces, basil, or powdered spices, which clearly violates the rule of service mentioned above. The wider the rim, the smaller the serving area, thus also reducing the amount of food served. Therefore, the plate with the widest rim and the tiny serving area is called a gourmet plate, as it is meant for expensive and elaborate dishes, representing quality rather than quantity.
