Description
A rim plate is a round dinner plate with a distinctive rim that surrounds the food area, known as the mirror, like a frame. Serving food on a rim plate enhances the presentation and makes it more appealing.
Flat dinner plates with a wide rim combine the aesthetic appeal of the food with practical functionality for serving and handling. The pronounced rim makes it easier to lift the plate in and out and creates a clear separation between the food area and the contact zone. Especially with heavily preheated plates, only a flag plate offers the possibility of using a torchon (serving cloth) at the table. Another advantage of the flag plate over a rimless coup-shaped dinner plate is its greater stability in the dishwasher or dishwashing basket. Coup plates usually have the negative characteristic of tipping forward slightly in the dishwasher basket, thus often taking up more space. In sophisticated cuisine, the flags are decoratively incorporated into the food arrangement, for example through fine sauce combinations, herbal accents or spice dusts. This is a modern interpretation of classic serving rules, in which the edge of the plate is also used for decorative purposes. Traditional serving masters at Swiss hotel management schools, on the other hand, teach that ‘the mirror belongs to the food and the flag to the guest...’
