Description
The name ‘coup plate’ is derived from the word ‘cuppa’, which describes a rimless vessel that rises upwards. In the glass industry, the upper part of a stemmed glass, the actual vessel, is also referred to as a cuppa. The fully usable surface of a typical coupteller extends seamlessly and continuously from edge to edge. Coup plates come in many different shapes, heights and designs. Rimless square plates belong to the coup plate group, as do the large, curved WOK plates with their subtle Asian look.
The most obvious difference between coup plates plates and classic flag plates, i.e. plates with a rim around the edge, is the larger serving area. Rimless coup plates can hold considerably more food than a flag plate of the same size. This results in considerable economies of use, as the space required in the dishwasher and in the bar is also significantly reduced. When serving, coup plates are somewhat more difficult to handle when placing and removing them, and it is better to use flag plates, especially for heavily preheated plates. Depending on their shape and height, coup plates need to be handled carefully by service staff to ensure they are placed correctly and hygienically. On the other hand, coup-shaped breakfast and dinner plates are more suited to hearty, traditional dishes with a much larger serving area and tend to be used for larger portions.
