Description
A flag plate is a round dinner plate with a distinctive rim that surrounds the food area, known as the mirror, like a frame. Serving food on a flag plate enhances the presentation and raises its perceived quality.
Deep flag plates also combine the design effect of the food, like their flat counterparts, but the practical functional features are clearly the focus with deep plates. When it comes to service, the deep flag plate clearly scores points over the coupe plate when lifting and lowering due to its wide rim, as it offers a much more stable feel.
The use of extremely preheated deep plates is rather rare, and therefore the advantage of serving with a torchon (serving cloth) is rather insignificant. In gastronomy, deep plates are less common for serving soups because soup bowls and soup cups offer far more handling advantages. This is not the case with table soups, where guests serve themselves from a tureen. Deep flag plates are mainly used for: - Salads and salad variations of all kinds - Fine starter variations - Pasta and noodle dishes - Rice and risotto dishes

Another advantage of deep flag plates over rimless coup-shaped dinner plates is that they are more stable in the dishwasher or dish rack. Deep coupe plates usually have the disadvantage of tipping forward slightly in the dishwasher basket, thus often taking up more space.
The plate rim can be used to derive the rule that the wider the rim, the higher the culinary standards of the food served. Gourmet plates symbolise this rule, as the rim is always wider and larger than the food area.
