Segment Plates
The compartment plates, also known as segment plates, are typically only referred to as such out of habit. From a purely manufacturing perspective, these discs are considered to be plates. The intended use of the respective compartment plate varies considerably, from menu plates for stationary system catering to innovative serving elements for event catering. However, all compartment plates serve the same purpose: they generally separate food and sauces or solid and liquid food components from each other. This separation is of particular importance in long journeys or mobile catering. To put it simply, chips that are in the gravy will become soggy and lose their flavour.
The considerably more complex production of compartment plates compared to normal food plates explains the higher price. The production of the inner ridges in the same body thickness as the outer walls is a particularly complex process. However, this detail is particularly important for the stability and durability of the compartment plates. A deviation of just half a millimetre results in a different degree of shrinkage and the webs appear uneven. Segment plates are always compression moulded and have a higher dead weight than plates. This has a positive effect on the food, as the heat storage capacity of the porcelain is particularly high. Food on segment plates always stays hot for longer than on ordinary plates.
