Classic Dining Plates
Before we proceed to describe the individual items within this "classic menu plates" group, let us first provide a brief definition. A menu plate is defined as a food plate that serves the main course or main component of the menu in the context of a coherent menu comprising several courses. In contrast to a classic serving plate, the selection of size, shape and design for a menu plate is typically not driven by the objective of imparting a distinctive character to the main course. Naturally, the time of day, the type of establishment and the demands of the host are significant factors. A typical lunch menu is designed to provide a healthy, balanced diet and refreshment during the working day. In contrast, a gourmet menu requires a greater number of dishes, a more complex course sequence and careful coordination with the surroundings, seasonal occasion and wines. In upmarket Belgian cuisine, the main courses served in the evening are often presented on large decorative plates measuring up to 33 cm in diameter. In German-speaking countries, however, menus rarely last 3-4 hours, resulting in smaller portion sizes and fewer courses than in French and Mediterranean cuisine. The typical German menu sequence comprises soup, main course and dessert. For many, more is work.
Of course, you can increase and top everything up, as long as there is sufficient budget. In compiling this section, we have focused on mid-range menus, where the overall arrangement should fit together and present a uniform picture. We refer to this as the good middle-class menu of down-to-earth catering and restaurants. In other words, no unusual shapes, but small to medium portion sizes served on flat plates. The recommended serving area is between 14 and 20 cm.
