Small oven dishes from 0.21 to 0.40 litres are ideal for preparing and serving small portions of sweet or savoury treats. The most well-known sweet dishes include crème brûlée, crema catalana and Turkish delight, cupcakes, cup muffins and Jell-O. In the realm of savoury cuisine, the baked prawns al ajillo, the puff pastry pie and gratinated, small mushroom dishes are particularly noteworthy.

At this juncture, we would be remiss if we did not offer a technical note. Ovenproof porcelain is a member of the ovenproof family and is designed for use in the oven, for gratinating and also in the Convectomat. It can be used in temperature zones far above 300 °C, although we at Holst Porzellan claim that our hard porcelain is temperature-resistant up to 300 °C for the safety of our customers. In fact, it can go much higher. Nevertheless, Holst oven porcelain, like that of most other manufacturers, is not resistant to thermal shock. It is important to note that conventional oven porcelain should not be exposed to extreme temperature fluctuations, such as those experienced when moving from a refrigerator to a combi-steamer.

In contrast, Holst Porzellan's high-alumina porcelain is thermal shock resistant up to +- 180 °C. This means that virtually every item made from this particularly stable and resilient porcelain is more suitable for use in the oven and kitchen than the oven porcelain described here.
